How to choose
Four steps to the right knife
-
Start with what you cook most
Meat: a chef's knife or slicing knife. Vegetables: a santoku or nakiri. Fish: a fillet knife or yanagiba. Bread: a serrated bread knife.
-
Choose the length
About 200 mm or more for large produce and roasts, 150–180 mm for most home kitchens, under 130 mm for peeling and small work.
-
Choose the steel
Compare the steelsAUS-8 is hard-wearing and easy to sharpen. AUS-10, VG-10 and Damascus are harder, 59–61 HRC, and can take a finer edge.
-
Plan the care
Sharpening toolsA whetstone and a wooden or plastic board keep any edge sharp for years. Each product page shows a care kit matched to its steel.

Questions
Before you choose
Did not find the answer? Write to us and we will help you choose.
Contact usWhat size chef's knife should I buy?
Around 200 mm suits most home kitchens. Choose 150–180 mm for a small board or smaller hands. Go to 240 mm only if you have a large board and like long, sweeping cuts.
Is a harder blade always better?
No. A harder blade, such as 60–61 HRC, holds its edge longer but can chip if twisted or used on bones. A 58–59 HRC blade like AUS-8 is more forgiving and quicker to resharpen.
Can I cut bone with a chef's knife?
Avoid it. A chef's knife is made for meat, fish, vegetables and fruit. Hard bones can chip the edge. Use a heavier blade built for that work.
Can a chef's knife go in the dishwasher?
Wash it by hand. Heat, detergent and contact with other items dull the edge and can harm the handle. Rinse, wipe with a soft sponge and dry it at once.
What is the difference between a double-bevel and a convex edge?
A double-bevel edge is ground at an angle on both sides. A convex edge curves gently into the cutting line, which adds support behind the edge. Both are ground on both sides, so they suit right- and left-handed cooks.
What guarantee do SAMURA knives have?
Every product comes with the 2-year legal guarantee.
Can I return a knife?
Yes. You can return an order within 14 days – see the return policy for the conditions.
How should I care for my knife?
Wash by hand and dry straight away. Each product page lists the care instructions for that knife.
