Description
The Samura Yakovlev chef's knife is an all-round kitchen knife with a 200 mm blade and a cocobolo wood handle. You can use it for meat, fish, vegetables, fruit and bread, so it covers most of your daily prep. It was designed by Alex Yakovlev, SAMURA's founder, designer and engineer, who sketches every concept by hand.
Blade and steel
The blade is made from a single layer of AUS-8 stainless steel, hardened to 58–59 HRC. For home cooking this is a sensible balance: the edge holds up well to everyday cutting, and you can bring it back on a whetstone without much effort. AUS-8 is a corrosion-resistant stainless steel, and it stays in good condition when you wash and dry the knife soon after use.
The steel is nitrogen cooled for enhanced hardness and flexibility. Each blade is crafted from a single piece of steel with a full tang for durability, then polished by hand. The scalpel-like edge is hand-finished by bladesmiths.
Handle and balance
The ergonomic handle is made of cocobolo wood, which combines good looks with durability and comfort. Each knife is hand crafted and balanced by hand. It weighs 172 g net and measures 330 mm overall.
Best uses
- Slicing, dicing and portioning meat
- Cutting and portioning fish
- Chopping vegetables and slicing fruit
- Cutting bread
Care and sharpening
Rinse the knife with hot water and wipe it dry before first use. After that, wash it by hand with non-abrasive materials and wipe it dry; a dishwasher is not recommended, and the knife should not be left in the sink for long. Cut on wooden or plastic boards, never on glass, and leave bones to a SAMURA cleaver and frozen food to a double-sided serrated saw knife. Use a honing rod between sharpenings, sharpen on a whetstone at the original factory bevel angle of 15–17°, and store the knife in a brush block or knife holder where the blade does not touch metal items.
