Bread knives

A serrated bread knife saws through crisp crusts and soft crumb with an even stroke. Every knife here has a serrated edge: bread knives from the Mo-V, Mo-V Stonewash, Damascus, Reptile, Golf, Golf Stonewash and Bamboo series, plus Harakiri knives for bread and frozen food. Blades come in AUS-8 or AUS-10 stainless steel and Damascus steel, hardened to 58–61 HRC. For softer produce, see our serrated tomato knives.

Knife guide

The bread knife, explained

A bread knife uses a serrated edge to bite through hard crust without crushing the soft crumb inside. It also handles soft-skinned fruit and, in some models, frozen food. Here is how to choose and look after one.

What it is and what it does best

A bread knife has a long, straight blade with a serrated edge. The teeth grip a hard surface and cut it with a gentle sawing motion, so you do not have to press down.

That makes it the right tool wherever a firm outside hides a soft inside. Crusty loaves are the obvious case, but tomatoes, citrus and pineapple work the same way.

  • Crusty loaves, baguettes and sourdough
  • Soft brioche and sandwich bread without squashing
  • Cakes and sponge layers
  • Pineapple, melon and citrus

How to choose

Choose a blade longer than your usual loaf is wide. SAMURA bread knives run from 180 to 235 mm. Around 200 mm suits most loaves; go longer for wide country breads.

Every SAMURA bread knife has a serrated edge. Most use AUS-8 at 58–59 HRC. AUS-10 models reach 59–61 HRC, and the Damascus model sits at 60–61 HRC.

Handles include G-10, stainless steel, ABS plastic and polypropylene with a TPR soft-touch grip. Pick the one that feels secure when you saw.

Compared with the closest types

A tomato knife is a short serrated blade for small, soft-skinned produce. A bread knife is longer and handles bigger loaves.

A slicing knife has a smooth edge for clean cuts through meat and fish. It does not grip crust as well. A universal knife is a smaller all-rounder for everyday tasks.

In the SAMURA range

You will find bread knives in Harakiri, Reptile, Mo-V and Mo-V Stonewash, Golf and Golf Stonewash, Bamboo and Damascus.

Steels are AUS-8, AUS-10 and Damascus steel. Some models are listed for bread and frozen food, others for bread, vegetables and fruit.

Care and sharpening

Wash by hand and dry straight away. Crumbs and sugar can sit between the teeth, so wipe along the blade, away from the edge, with a soft cloth.

Serrated edges stay useful for a long time because the tips of the teeth take most of the wear. When they dull, use a thin tapered rod from our sharpening tools. Always cut on a wood or plastic cutting board.

Find your knife

How to choose

Four steps to the right knife

  1. Start with what you cook most

Meat: a chef's knife or slicing knife. Vegetables: a santoku or nakiri. Fish: a fillet knife or yanagiba. Bread: a serrated bread knife.

  2. Choose the length

About 200 mm or more for large produce and roasts, 150–180 mm for most home kitchens, under 130 mm for peeling and small work.

  3. Choose the steel

AUS-8 is hard-wearing and easy to sharpen. AUS-10, VG-10 and Damascus are harder, 59–61 HRC, and can take a finer edge.

    Compare the steels
  4. Plan the care

A whetstone and a wooden or plastic board keep any edge sharp for years. Each product page shows a care kit matched to its steel.

Questions

Before you choose

Did not find the answer? Write to us and we will help you choose.

Contact us
What length should my bread knife be?

Choose a blade a little longer than the widest loaf you buy. Around 200 mm covers most bread. SAMURA bread knives run from 180 to 235 mm.

Why does a bread knife have a serrated edge?

The teeth catch on a hard or slippery surface and cut it with a light sawing motion. You avoid pressing down, so the soft crumb inside keeps its shape.

Can I cut frozen food with a bread knife?

Only with a model listed for it. Some SAMURA bread knives are listed for bread and frozen food, so check the product page. Use a slow sawing motion and never twist or lever the blade.

How do I sharpen a serrated bread knife?

Work each scallop on the bevelled side with a thin tapered rod, then remove the small burr on the flat side with a light pass. Serrated edges need this far less often than smooth edges.

How should I clean my bread knife?

Wash it by hand with warm water and mild soap. Wipe along the blade, away from the edge, and dry it at once.

What guarantee do SAMURA knives have?

Every product comes with the 2-year legal guarantee.

Can I return a knife?

Yes. You can return an order within 14 days – see the return policy for the conditions.

How should I care for my knife?

Wash by hand and dry straight away. Each product page lists the care instructions for that knife.
