How to choose
Four steps to the right knife
-
Start with what you cook most
Meat: a chef's knife or slicing knife. Vegetables: a santoku or nakiri. Fish: a fillet knife or yanagiba. Bread: a serrated bread knife.
-
Choose the length
About 200 mm or more for large produce and roasts, 150–180 mm for most home kitchens, under 130 mm for peeling and small work.
-
Choose the steel
Compare the steelsAUS-8 is hard-wearing and easy to sharpen. AUS-10, VG-10 and Damascus are harder, 59–61 HRC, and can take a finer edge.
-
Plan the care
Sharpening toolsA whetstone and a wooden or plastic board keep any edge sharp for years. Each product page shows a care kit matched to its steel.

Questions
Before you choose
Did not find the answer? Write to us and we will help you choose.
Contact usWhat does santoku mean?
It is often translated as "three virtues", usually taken to mean meat, fish and vegetables. It describes a versatile everyday knife.
Can I rock-chop with a santoku?
Only a little. The flat edge suits straight push cuts and up-and-down chopping. For rocking, a curved chef's knife is the right tool.
What are the dimples on some santoku blades?
Hammered or dimpled finishes create small air pockets between blade and food. They can help reduce sticking when you slice potatoes, cucumbers and similar foods.
Is a santoku enough as my only knife?
For many home cooks, yes. Pair it with a paring knife for small, in-hand work and a bread knife for crusty loaves.
Is a santoku dishwasher-safe?
Wash it by hand. Dishwashers dull edges and can damage handles. Rinse, wipe gently and dry it right away.
What guarantee do SAMURA knives have?
Every product comes with the 2-year legal guarantee.
Can I return a knife?
Yes. You can return an order within 14 days – see the return policy for the conditions.
How should I care for my knife?
Wash by hand and dry straight away. Each product page lists the care instructions for that knife.
