The paring knife, explained
A paring knife is small, light and precise. It peels, trims, cores and shapes fruit and vegetables, often in your hand rather than on the board. Here is how to choose one.

How to choose
Four steps to the right knife
-
Start with what you cook most
Meat: a chef's knife or slicing knife. Vegetables: a santoku or nakiri. Fish: a fillet knife or yanagiba. Bread: a serrated bread knife.
-
Choose the length
About 200 mm or more for large produce and roasts, 150–180 mm for most home kitchens, under 130 mm for peeling and small work.
-
Choose the steel
Compare the steelsAUS-8 is hard-wearing and easy to sharpen. AUS-10, VG-10 and Damascus are harder, 59–61 HRC, and can take a finer edge.
-
Plan the care
Sharpening toolsA whetstone and a wooden or plastic board keep any edge sharp for years. Each product page shows a care kit matched to its steel.

Questions
Before you choose
Did not find the answer? Write to us and we will help you choose.
Contact usWhat is a paring knife used for?
Peeling, trimming, coring, hulling strawberries, scoring and other small, precise jobs, usually with the food held in your hand.
How long should a paring knife be?
About 80–100 mm suits most hands and tasks. Shorter is better for peeling, slightly longer for light board work.
Steel or ceramic paring knife?
Steel is tougher and easy to resharpen. Ceramic is light and stays sharp for a long time, but it can chip if dropped or twisted.
Is a paring knife dishwasher-safe?
Wash it by hand. Small knives are easily knocked around in a dishwasher, which dulls the edge and can harm the handle.
What guarantee do SAMURA knives have?
Every product comes with the 2-year legal guarantee.
Can I return a knife?
Yes. You can return an order within 14 days – see the return policy for the conditions.
How should I care for my knife?
Wash by hand and dry straight away. Each product page lists the care instructions for that knife.
