The details
A closer look
The Samura Golf Stonewash paring knife is a small kitchen knife with a 98 mm blade for close work on fruit and vegetables. Use it to peel, to cut away blemishes with care and to chop produce into small pieces. The AUS-8 stainless steel blade has a stonewash finish and is paired with a black soft-touch handle.
Blade and steel
The blade is made from a single layer of AUS-8 stainless steel, hardened to 58–59 HRC. This is a practical hardness for everyday cooking: the edge holds up well to daily peeling and trimming, and when it dulls, it is straightforward to restore on a whetstone. AUS-8 is a corrosion-resistant stainless steel, but you should still wash and dry the knife soon after use.
The double-bevel edge is ground on both sides, with an original factory bevel angle of 15–17°, so it is simple to keep in shape with a honing rod and a whetstone. The blade is 30 mm high, and its thin spine gives it a sense of finesse for small, detailed tasks. The stonewash finish sets the Golf Stonewash line apart from the standard Golf knives.
Handle and balance
The black handle is made of polypropylene with TPR soft-touch. Its ergonomic shape gives you a secure grip that helps keep the knife from slipping or turning in your hand as you work. The knife measures 205 mm overall.
Best uses
- Peeling fruit and vegetables
- Cutting blemishes out of fruit and vegetables
- Preparing small fruits
- Chopping fruit and vegetables into small pieces
Care and sharpening
Rinse the knife with hot water and wipe it dry before first use. Wash it by hand with non-abrasive materials and wipe it dry; a dishwasher is not recommended, and do not leave it in the sink for long. Cut on wooden or plastic boards, never on glass, and leave bones to a SAMURA cleaver and frozen food to a double-sided saw knife with a serrated blade. Store the knife in a brush block or knife holder where the blade does not touch metal items, use a honing rod between sharpenings and resharpen on a whetstone at the original factory bevel angle of 15–17°.

Care & sharpening
Keep it sharp
- Before first use, rinse with hot water and wipe dry.
- Use only on wooden or plastic cutting boards, never on glass.

- Clean by hand with non-abrasive materials and wipe dry. A dishwasher is not recommended.
- Do not leave knives in the sink for a long time.
- Store in a brush block or knife holder so that the blade does not touch metal items.
