The details
A closer look
The Samura Butcher paring knife brings the hand-sharpened edge and textured grip of the Butcher series to a compact 91 mm blade. It is made for the small jobs on fruit and vegetables: peeling, trimming and cutting small pieces. Light in the hand, it suits close, controlled work.
Blade and steel
The blade is made from a single layer of AUS-8 stainless steel, hardened to 58–59 HRC. Hard steel keeps its sharpness for a long time, and when the edge does dull, you can restore it on a whetstone. AUS-8 is a corrosion-resistant stainless steel, so a quick wash and dry after use keeps it in good condition.
Like every Butcher knife, it is sharpened by hand with a convex edge: the sides of the blade curve gently into the cutting edge instead of meeting in a flat V. SAMURA uses this technique for a durable, even edge that cuts cleanly through fibres. The blade is 24 mm high.
Handle and balance
The handle is made of black TPE and has the curved shape of the Butcher series. Its textured, non-slip grip helps stop wet hands from slipping, so you can make confident, quick cuts. The knife weighs 50 g net and measures 200 mm overall.
Best uses
- Peeling fruit and vegetables
- Trimming and topping vegetables
- Cutting small fruit and vegetables into pieces
- Removing seeds, cores and blemishes
Care and sharpening
Before first use, rinse the knife with hot water and wipe it dry. Wash it by hand with non-abrasive materials and dry it straight away; a dishwasher is not recommended, and the knife should not be left in the sink for long. Cut on wooden or plastic boards, never on glass, leave bones to a SAMURA cleaver and frozen food to a double-sided saw knife with a serrated blade, and store the knife in a brush block or knife holder where the blade does not touch metal items. Use a honing rod between sharpenings and resharpen on a whetstone at the original factory bevel angle of 15–17°.
About the Butcher series
