Knife guide

The pchak knife, explained

The pchak is a broad, straight-backed knife from the Central Asian tradition. It slices meat, fish and vegetables with long, steady strokes. Here is how it works, how to choose one and how to keep its convex edge keen.

What it is and what it does best

A pchak has a wide blade, a fairly straight spine and an edge that sweeps up gently towards the tip. The broad blade puts weight behind each stroke, so the knife moves through food with little effort.

It is a true all-rounder. You can slice meat for a stew, portion fish, shred onions and cut bread with the same knife. Longer slicer pchaks are made for long, clean cuts through roasts and large vegetables.

  • Slicing raw and cooked meat
  • Shredding onions, cabbage and herbs
  • Portioning fish fillets
  • Cutting bread and sausage

How to choose

SAMURA pchaks run from 159 to 213 mm. A shorter blade suits a compact board and smaller hands. A longer one gives you a full slicing stroke for roasts and big vegetables.

Think about steel and grip too. 67-layer Damascus steel at 59–61 HRC is harder and generally holds an edge longer. AUS-8 stainless steel at 58–59 HRC is tough and easy to resharpen. G-10 handles feel firm and dense; TPE handles are softer and keep their grip when wet.

Compared with the closest types

A chef's knife usually has more curve along the edge, which suits a rocking cut. The pchak's flatter edge favours push and pull strokes, much like a wide slicer.

A slicing knife is narrower and made mainly for carving. The pchak's broad blade makes it more versatile: it slices, chops and scoops food off the board.

In the SAMURA range

The pchak shape comes in the Sultan and Sultan Pro series. Sultan uses 67-layer Damascus steel at 59–61 HRC with G-10 handles. Sultan Pro is inspired by the Turkic pchak hunting knife, with AUS-8 stainless steel at 58–59 HRC, TPE handles and a satin or stonewash finish.

You will find pchaks, long slicer pchaks and chef's knives here. Every blade in the collection has a convex edge.

Care and sharpening

Wash your pchak by hand in warm water and dry it straight away. Store it in a block, on a magnetic strip or in a sheath, not loose in a drawer.

A convex edge curves gently into the apex rather than meeting it at a flat bevel. Hone it regularly and touch it up on whetstones with light, rolling strokes that follow that curve.

Find your knife

How to choose

Four steps to the right knife

  1. Start with what you cook most

Meat: a chef's knife or slicing knife. Vegetables: a santoku or nakiri. Fish: a fillet knife or yanagiba. Bread: a serrated bread knife.

  2. Choose the length

About 200 mm or more for large produce and roasts, 150–180 mm for most home kitchens, under 130 mm for peeling and small work.

  3. Choose the steel

AUS-8 is hard-wearing and easy to sharpen. AUS-10, VG-10 and Damascus are harder, 59–61 HRC, and can take a finer edge.

    Compare the steels
  4. Plan the care

A whetstone and a wooden or plastic board keep any edge sharp for years. Each product page shows a care kit matched to its steel.

Contact us
What is a pchak used for?

A pchak is a general kitchen knife. It slices meat, fish, vegetables, fruit and bread. Its wide blade makes long slicing strokes easy.

Which length should I choose?

SAMURA pchaks run from 159 to 213 mm. Pick the shorter end for small boards and everyday prep. Pick the longer end if you often slice roasts or large vegetables.

What is the difference between Sultan and Sultan Pro?

Sultan has 67-layer Damascus steel at 59–61 HRC and G-10 handles. Sultan Pro has AUS-8 stainless steel at 58–59 HRC, TPE handles and a satin or stonewash finish.

What is a convex edge?

The sides of a convex edge curve gently down to the cutting line instead of meeting at a flat bevel. It keeps plenty of steel behind the edge for support.

Can a pchak replace my chef's knife?

For many cooks, yes. It handles most chef's knife tasks. If you prefer rocking cuts, a chef's knife with a more curved edge may feel more natural.

What guarantee do SAMURA knives have?

Every product comes with the 2-year legal guarantee.

Can I return a knife?

Yes. You can return an order within 14 days – see the return policy for the conditions.

How should I care for my knife?

Wash by hand and dry straight away. Each product page lists the care instructions for that knife.
