The details
A closer look
The Samura Sultan long slicer pchak is a slicing knife with a 210 mm blade in the shape of the classic Asian pchak. The long blade lets you work through boneless meat, fish, sausage and bread in long, even strokes, and it also handles vegetables and fruit. Its forged 67-layer Damascus steel blade is paired with a black G-10 handle and a stainless steel bolster.
Blade and steel
The blade is forged from 67 layers of Damascus steel and hardened to 59–61 HRC. Steel this hard keeps its edge well through regular slicing, so you can go longer between sharpenings, and a whetstone brings it back when it needs attention. The trade-off is that a hard edge should be kept away from bones, frozen food and glass boards.
The blade has a convex edge: its sides curve gently down to the cutting edge instead of meeting in a flat, V-shaped bevel.
Handle and balance
The handle is made of black G-10 and meets the blade at a stainless steel bolster. The knife weighs 194 g net and measures 337 mm overall.
Best uses
- Slicing and portioning boneless meat
- Slicing and portioning fish
- Slicing sausage
- Slicing bread
- Cutting vegetables and fruit
Care and sharpening
Rinse the knife with hot water and wipe it dry before first use. Wash it by hand with non-abrasive materials and wipe it dry; a dishwasher is not recommended, and the knife should not be left in the sink for long. Cut on wooden or plastic boards, never on glass, and leave bones to a SAMURA cleaver and frozen food to a double-sided saw knife with a serrated blade. Store the knife in a brush block or knife holder where the blade does not touch metal items, use a honing rod between sharpenings and resharpen on a whetstone at the original factory bevel angle of 15–17°.
