The details

A closer look

The Samura Harakiri paring knife is a compact knife with a 99 mm blade, here in the version with a white acrylic handle. It is made for the small jobs where a larger blade is awkward: peeling, trimming and cutting fruit and vegetables into small pieces. Its light weight suits close, detailed work.

Blade and steel

Its single-layer blade is AUS-8 stainless steel with a hardness of 58–59 HRC. That gives you an edge that stands up to daily peeling and trimming, yet stays easy to resharpen on a whetstone when it dulls. AUS-8 is corrosion-resistant, so simple care is enough: wash and dry the knife after each use.

The edge is ground on both sides (double bevel), so a honing rod and a whetstone are all you need to keep it in shape. At 27 mm high, the blade is compact enough to work around small fruit and vegetables.

Handle and balance

The handle is made of white acrylic, the material that gives the Harakiri Acryl line its name. With a net weight of 52 g and an overall length of 209 mm, the knife is light and compact, which suits small, controlled cuts.

Best uses

  • Peeling apples, pears, potatoes and carrots
  • Trimming the ends of beans and other vegetables
  • Halving and quartering small fruit and vegetables
  • Coring fruit and cutting out blemishes
  • Preparing fruit for serving

Care and sharpening

Rinse the knife with hot water and wipe it dry before you use it for the first time. Then wash it by hand with non-abrasive materials and wipe it dry; a dishwasher is not recommended, and the knife should not be left in the sink for long. Use it on wooden or plastic boards, never on glass, leave bones to a SAMURA cleaver and frozen food to a double-sided saw knife with a serrated blade, and keep it in a brush block or knife holder where the blade does not touch metal items. Between sharpenings, use a honing rod, and resharpen on a whetstone at the original factory bevel angle of 15–17°.

Care & sharpening

Keep it sharp

  • Before first use, rinse with hot water and wipe dry.
  • Use only on wooden or plastic cutting boards, never on glass.
  • Take care with food that contains bones: use a SAMURA cleaver for meat and bones and a double-sided saw knife with a serrated blade for frozen food.
  • Clean by hand with non-abrasive materials and wipe dry. A dishwasher is not recommended.
  • Do not leave knives in the sink for a long time.
  • Store in a brush block or knife holder so that the blade does not touch metal items.
  • Sharpen on a whetstone and keep the original factory bevel angle of 15–17°. Use a honing rod between sharpenings, moving the edge along the rod from the handle to the point.
  • Never test sharpness with bare hands; use a piece of paper.
