Description
The Samura Harakiri knife set brings together three matching knives with white acrylic handles: a 99 mm paring knife, a 150 mm utility knife and a 208 mm chef's knife. Between them they cover the everyday jobs, from peeling fruit and slicing cheese to chopping vegetables and portioning meat and fish. It is a simple way to equip your kitchen with knives from the Harakiri Acryl line.
Blade and steel
All three blades are made from a single layer of AUS-8 stainless steel, hardened to 58–59 HRC. In practice, this hardness holds a working edge through daily prep, and you can restore it on a whetstone when it dulls. AUS-8 is a corrosion-resistant stainless steel.
Each knife has a double-bevel edge, ground on both sides of the blade, which keeps resharpening straightforward. The three blade lengths step up from short to long, so you can pick the size that suits the food in front of you.
Handle and balance
The handles are made of white acrylic, the material that gives the Harakiri Acryl line its name. In keeping with the lightweight Harakiri series, the three knives weigh 229 g net in total.

Care and sharpening
Rinse the knives with hot water and wipe them dry before first use. Wash them by hand with non-abrasive materials and wipe them dry; a dishwasher is not recommended, and do not leave them in the sink for long. Cut on wooden or plastic boards, never on glass, leave bones to a SAMURA cleaver and frozen food to a double-sided saw knife with a serrated blade, and store the knives in a brush block or knife holder where the blades do not touch metal items. Use a honing rod between sharpenings and sharpen on a whetstone at the original factory bevel angle of 15–17°.
