Description
The Samura Harakiri knife set brings together five kitchen knives for everyday prep: a 99 mm paring knife, a 150 mm utility knife, a 170 mm nakiri, a 208 mm chef's knife and a 175 mm santoku. Together they cover meat, fish, vegetables, fruit, bread, cheese and sausage. All five have AUS-8 stainless steel blades and black ABS plastic handles.
Blade and steel
The blades are made from a single layer of AUS-8 stainless steel and hardened to 58–59 HRC. This hardness gives you a practical balance: the edges hold up well to daily cutting, and when they need attention, they are straightforward to restore on a whetstone. AUS-8 is a corrosion-resistant stainless steel, but the knives still need washing and drying by hand, as described below.
Every knife has a double-bevel edge, ground on both sides. The shapes differ: the paring knife has a short blade, the utility knife a medium-sized one, the nakiri a wide, medium-sized blade and the chef's knife a wide, long blade. The santoku has a traditional Japanese blade form.
Handle and balance
The handles are made of durable black ABS plastic and secured with classic rivets. Like the rest of the Harakiri series, the knives have a full-tang construction and are light in the hand. The net weight of the set is 453 g.

Care and sharpening
Rinse the knives with hot water and wipe them dry before first use. Wash them by hand with non-abrasive materials and wipe them dry; a dishwasher is not recommended, and do not leave them in the sink for long. Cut on wooden or plastic boards, never on glass, and leave bones to a SAMURA cleaver and frozen food to a double-sided saw knife with a serrated blade. Use a honing rod between sharpenings, sharpen on a whetstone at the original factory bevel angle of 15–17°, and store the knives in a brush block or knife holder where the blades do not touch metal items.
