Description
The Samura Harakiri serrated chef's knife combines a 208 mm chef's knife blade with a serrated edge and a black handle. The serrations make it a good fit for foods that are a little harder to cut, such as firm fruit and vegetables, and it also takes on bread, meat and fish. If you want a chef's knife for firmer ingredients, it is a practical choice.
Blade and steel
The blade is made from a single layer of AUS-8 stainless steel, hardened to 58–59 HRC. At this hardness the edge holds up well to everyday use. AUS-8 is a corrosion-resistant stainless steel, and it stays in good condition when you wash and dry the knife soon after use.
The serrated edge is this knife's most obvious feature and what sets it apart from a plain-edged chef's knife. The blade is 46 mm high.
Handle and balance
The black handle is made of durable ABS plastic. As with the other ABS-handled Harakiri knives, it has a full-tang construction, and the handle is secured with three classic rivets. With a net weight of 112 g, it is light in the hand.
Best uses
- Slicing firm fruit and vegetables
- Cutting bread
- Slicing boneless meat
- Portioning fish
Care and sharpening
Rinse the knife with hot water and wipe it dry before first use. After that, wash it by hand with non-abrasive materials and wipe it dry; a dishwasher is not recommended, and the knife should not be left in the sink for long. Cut on wooden or plastic boards, never on glass, leave bones to a SAMURA cleaver and frozen food to a double-sided saw knife with a serrated blade, and store the knife in a brush block or knife holder where the blade does not touch metal items. Use a honing rod between sharpenings and sharpen on a whetstone at the original factory bevel angle of 15–17°.
