The details
A closer look
The Samura Harakiri grand chef's knife is the long-bladed version of the classic chef's knife, with a 240 mm blade and a black handle. The extra length is useful on larger produce and bigger cuts of meat or fish. Like the standard version, it covers meat, fish, vegetables, fruit and bread.
Blade and steel
The blade is made from a single layer of AUS-8 stainless steel, hardened to 58–59 HRC. This is a practical balance for everyday cooking: the edge holds up to regular use, and you can restore it on a whetstone without much effort. AUS-8 is a corrosion-resistant steel, so the knife stays in good shape when you wash and dry it straight after use.
The double-bevel edge is ground on both sides of the blade. Sharpening it is simple: work one side on the whetstone until a burr appears, then the other, along the full length of the blade.
Handle and balance
The handle is made of durable black ABS plastic and held in place by three classic rivets. It shares the full-tang construction of the Harakiri series, which SAMURA describes as lightweight.
Best uses
- Slicing and portioning larger cuts of boneless meat
- Cutting and portioning fish
- Chopping, slicing and dicing vegetables
- Slicing fruit
- Cutting bread
Care and sharpening
Rinse the knife with hot water and wipe it dry before first use, then clean it by hand with non-abrasive materials and dry it each time; a dishwasher is not recommended, and the knife should not stay in the sink for long. Cut on wooden or plastic boards, never on glass, and use a SAMURA cleaver for bones and a double-sided serrated saw knife for frozen food. Store the knife in a brush block or knife holder where the blade does not touch metal items, use a honing rod between sharpenings and sharpen on a whetstone at the original factory bevel angle of 15–17°.
