Description
The Samura Damascus bread knife has a 230 mm blade with a serrated edge, made for food with a hard crust and a soft centre. It cuts through crusty bread and pastry without crushing the soft inside, and it also handles fruit with a firm rind, such as watermelon. The blade is made from 67 layers of Damascus steel and paired with a black G-10 handle.
Blade and steel
The long, fairly wide blade is made from 67 layers of Damascus steel and hardened to 60–61 HRC. A hard blade holds its edge for a long time, so the knife stays sharp through a lot of slicing before it needs attention. In return, a hard edge asks for a little care: keep it away from bones, frozen food and glass surfaces.
Along the serrated edge, small teeth work like a saw. They bite into a hard crust or rind and carry the cut through with a gentle back-and-forth motion, so the soft core keeps its shape. The blade is 230 mm long and 32 mm high.
Handle and balance
The ergonomic black G-10 handle is made of a heat- and moisture-resistant material and sits confidently in your hand. A stainless steel bolster joins the blade to the handle for durability and control as you slice. The knife weighs 223 g and measures 365 mm overall.
Best uses
- Slicing crusty bread without crushing the soft centre
- Cutting pastry and other baked goods
- Cutting watermelon and other fruit with a firm rind
- Slicing fruit and vegetables
Care and sharpening
Rinse the knife with hot water and wipe it dry before first use. After that, wash it by hand with non-abrasive materials and wipe it dry; a dishwasher is not recommended, and the knife should not be left in the sink for long. Cut on wooden or plastic boards, never on glass, and leave bones to a SAMURA cleaver and frozen food to a double-sided saw knife with a serrated blade. Store the knife in a brush block or knife holder where the blade does not touch metal items, use a honing rod between sharpenings and keep the original factory sharpening angle of 16–18° when you sharpen it.
