The details
A closer look
The Samura Damascus slicing knife is made for cutting food into thin, even slices. With a long 230 mm blade and a narrow profile, it lets you slice meat, fish fillets and sausage neatly for the table, and it also handles vegetables and bread. Reach for it, too, when you prepare sushi, sashimi and other Asian dishes.
Blade and steel
The blade is made of 67 layers of Damascus steel and hardened to 60–61 HRC. The Damascus series combines the traditional craft of layered Damascus steel with modern manufacturing methods. A hard blade holds its edge for a long time, so you spend more time slicing and less time sharpening. In return, it asks for a little care: keep it away from bones, frozen food and glass boards.
The convex edge is sharpened on both sides at a factory angle of 16–18°, and the Damascus blade is made to slice with minimal resistance. The blade is 33 mm high.
Handle and balance
The ergonomic handle is made of black G-10, a moisture-resistant material, and is fitted with a stainless steel bolster. The bolster adds durability and control, and it helps keep your fingers away from the food as you slice. The knife weighs 230 g and measures 370 mm overall.
Best uses
- Slicing meat thinly and evenly for serving
- Slicing fish fillets for serving
- Preparing sushi and sashimi
- Cutting sausage into neat slices
- Slicing vegetables
- Cutting bread
Care and sharpening
Rinse the knife with hot water and wipe it dry before first use, then wash it by hand with non-abrasive materials and dry it; a dishwasher is not recommended, and the knife should not be left in the sink for long. Cut on wooden or plastic boards, never on glass, and leave bones to a SAMURA cleaver and frozen food to a double-sided serrated saw knife. Sharpen on a whetstone at the original factory angle of 16–18°, and use a honing rod between sharpenings, drawing the edge along the rod from the handle to the point. Store the knife in a brush block or knife holder where the blade does not touch metal items.

Care & sharpening
Keep it sharp
- Before first use, rinse with hot water and wipe dry.
- Use only on wooden or plastic cutting boards, never on glass.
- Take care with food that contains bones: use a SAMURA cleaver for meat and bones and a double-sided saw knife with a serrated blade for frozen food.
- Clean by hand with non-abrasive materials and wipe dry. A dishwasher is not recommended.
- Do not leave knives in the sink for a long time.
- Store in a brush block or knife holder so that the blade does not touch metal items.
