Key facts

A double-sided water whetstone for sharpening kitchen knives at home: the #1000 side for preliminary sharpening, the #3000 side for the final finish. 240 × 80 mm, 40 mm thick.

The details

A closer look

The Samura combination whetstone #1000/#3000 is a double-sided water stone for sharpening your kitchen knives by hand. The #1000 side takes care of preliminary sharpening and the #3000 side gives the edge its final finish, so you can complete both steps on one stone. It is easy to use, even if you are new to sharpening on a whetstone.

Grit and sharpening

The grit number tells you how fine a stone is: the higher the number, the finer the abrasive and the smoother the edge it leaves. Start on the #1000 side to sharpen the blade and remove small defects and signs of wear from the edge. Then turn the stone over and finish on the #3000 side to refine the cutting edge. This pairing of grits is a versatile choice for knife care at home, and it also suits knives made of hard steel.

Size, weight and warranty

The stone measures 240 × 80 mm and is 40 mm thick, with a net weight of 1400 g. The whetstone comes with a 2-year warranty.

Best uses

  • Preliminary sharpening on the #1000 side
  • Removing small defects and signs of wear from the edge
  • Final finishing of the edge on the #3000 side
  • Double-bevel knives, one side at a time until a burr appears
  • Single-bevel Japanese knives, bevelled side first

Care and sharpening

Before use, submerge the whetstone completely in water for 10–15 minutes and keep it wet while you sharpen. Sharpen one side of the knife until a burr appears, then sharpen the other side, keeping the original factory bevel angle of 15–17°. For single-bevel Japanese knives, sharpen the bevelled side until a uniform burr appears, then pass the concave side lightly over the stone. Repeat on the finer #3000 side if needed.
