The details
A closer look
The Samura Harakiri chef's knife is an all-round kitchen knife with a 208 mm blade and a black handle. Its wide, long blade suits larger foods such as meat, fish and cabbage, and it handles delicate slicing as well as chopping and dicing. It covers everyday prep, from shredding and slicing to mincing.
Blade and steel
The blade is made from a single layer of AUS-8 stainless steel with a hardness of 58–59 HRC. In practice, the edge holds up well to regular cooking, and it does not take much effort to restore it on a whetstone. Because AUS-8 is a corrosion-resistant steel, the blade stays in good condition when you clean and dry it promptly.
The 46 mm high blade has a double-bevel edge, ground on both sides. This kind of edge is easy to keep sharp: you work one side on the whetstone until a burr forms, then the other side.
Handle and balance
The handle is made of durable black ABS plastic and secured with three classic rivets, and the knife shares the full-tang construction of the Harakiri series. At 114 g net and 329 mm overall, it reflects the lightweight build of the series.
Best uses
- Slicing and portioning boneless meat
- Cutting and portioning fish fillets
- Shredding cabbage and chopping large vegetables
- Dicing onions and mincing vegetables
- Slicing fruit and cutting bread
Care and sharpening
Rinse the knife with hot water and dry it before you use it for the first time. Wash it by hand with non-abrasive materials and wipe it dry straight away, rather than putting it in the dishwasher (not recommended) or leaving it in the sink for long. Use wooden or plastic boards, never glass, leave bones to a SAMURA cleaver and frozen food to a double-sided serrated saw knife, and store the knife in a brush block or knife holder so the blade does not touch metal items. Between sharpenings, draw the edge along a honing rod from the handle to the point, and sharpen on a whetstone at the original factory bevel angle of 15–17°.

Care & sharpening
Keep it sharp
- Before first use, rinse with hot water and wipe dry.
- Use only on wooden or plastic cutting boards, never on glass.
- Take care with food that contains bones: use a SAMURA cleaver for meat and bones and a double-sided saw knife with a serrated blade for frozen food.
- Clean by hand with non-abrasive materials and wipe dry. A dishwasher is not recommended.
- Do not leave knives in the sink for a long time.
- Store in a brush block or knife holder so that the blade does not touch metal items.
- Sharpen on a whetstone and keep the original factory bevel angle of 15–17°. Use a honing rod between sharpenings, moving the edge along the rod from the handle to the point.
- Never test sharpness with bare hands; use a piece of paper.
