Description
The Samura Damascus grand chef's knife is the big brother of the classic chef's knife, one you can trust with even more demanding tasks. Its 240 mm blade is the longest in the Damascus series, and you can use it every day for chopping, slicing, shredding, dicing and mincing. The blade is made of 67 layers of Damascus steel and paired with a black G-10 handle and a stainless steel bolster.
Blade and steel
The blade is made of 67 layers of Damascus steel and hardened to 60–61 HRC. The Damascus series combines the traditional craft of layered Damascus steel with modern manufacturing methods. A hard blade holds its edge for a long time, so you spend more time cutting and less time sharpening. In return, it asks for a little care: keep it away from bones, frozen food and glass boards.
The convex edge is sharpened on both sides at a factory angle of 16–18°. Like every Damascus blade, this one is made to slice with minimal resistance. The wide blade is 240 mm long and 50 mm high.
Handle and balance
The ergonomic handle is made of black G-10, a hard, moisture-resistant material that adds to the knife's reliability and durability. The handle is fitted with a stainless steel bolster, which gives you control and helps keep your fingers away from the food. The knife sits well balanced in the hand, weighs 270 g and measures 378 mm overall.
Best uses
- Chopping and dicing vegetables
- Shredding vegetables such as cabbage
- Slicing and portioning boneless meat
- Cutting and portioning fish
- Mincing ingredients
- Slicing fruit and cutting bread
Care and sharpening
Rinse the knife with hot water and wipe it dry before first use, then wash it by hand with non-abrasive materials and dry it; a dishwasher is not recommended, and the knife should not be left in the sink for long. Cut on wooden or plastic boards, never on glass, and leave bones to a SAMURA cleaver and frozen food to a double-sided serrated saw knife. Sharpen on a whetstone at the original factory angle of 16–18°, and use a honing rod between sharpenings, drawing the edge along the rod from the handle to the point. Store the knife in a brush block or knife holder where the blade does not touch metal items.
