Description
The Samura Bamboo grand chef's knife is the bigger sibling of the classic chef's knife, with a long 240 mm blade for larger jobs. You can use it every day for chopping, slicing, shredding, dicing and mincing, across meat, fish, vegetables, fruit and bread. Its full metal build pairs the blade with a stainless steel handle shaped like a bamboo stem.
Blade and steel
The blade is made from a single layer of AUS-8 stainless steel, hardened to 58–59 HRC. This gives you a practical balance: the edge holds up well to daily prep, and when it needs attention, it is straightforward to restore on a whetstone.
The thin, elegant blade has a double-bevel edge, ground on both sides, which keeps resharpening simple. The 240 mm blade is longer than the classic Bamboo chef's knife, which gives you more reach for larger produce and bigger pieces of boneless meat.
Handle and balance
The silver handle is made of stainless steel and shaped like a bamboo stem, the signature of the series. It is ergonomic and gives the knife a balanced feel in the hand. The knife weighs 136 g and measures 370 mm overall.
Best uses
- Chopping and dicing vegetables
- Shredding and mincing
- Slicing boneless meat
- Cutting and portioning fish
- Slicing fruit and cutting bread
Care and sharpening
Rinse the knife with hot water and wipe it dry before first use. Wash it by hand with non-abrasive materials and wipe it dry; a dishwasher is not recommended, and do not leave it in the sink for long. Cut on wooden or plastic boards, never on glass, and leave bones to a SAMURA cleaver and frozen food to a double-sided saw knife with a serrated blade. Store the knife in a brush block or knife holder where the blade does not touch metal items, use a honing rod between sharpenings and resharpen on a whetstone at the original factory bevel angle of 15–17°.
