The details
A closer look
The Samura Bamboo slicing knife is made for fine, precise work. Its long, narrow 200 mm blade cuts boneless meat and poultry, fish, sausage, vegetables and bread into thin, even slices. The steel blade and the bamboo-shaped steel handle give the knife a light, all-metal build.
Blade and steel
The blade is made from a single layer of AUS-8 stainless steel, hardened to 58–59 HRC. This hardness gives you a practical balance: the edge holds up well to everyday slicing, and when it needs attention, it is straightforward to restore on a whetstone.
The straight, long and narrow blade is shaped for accurate slicing. The double-bevel edge is ground on both sides, which keeps resharpening simple.
Handle and balance
The silver handle is made of stainless steel and shaped like a bamboo stem, the signature of the series. It is ergonomic and lets you guide the blade with precision. The knife weighs 101 g and measures 323 mm overall, so it is light in the hand.
Best uses
- Slicing boneless meat and poultry
- Slicing and portioning fish
- Cutting sausage into thin slices
- Slicing vegetables and fruit
- Slicing bread
Care and sharpening
Rinse the knife with hot water and wipe it dry before first use. Wash it by hand with non-abrasive materials and wipe it dry; a dishwasher is not recommended, and do not leave it in the sink for long. Cut on wooden or plastic boards, never on glass, and leave bones to a SAMURA cleaver and frozen food to a double-sided saw knife with a serrated blade. Store the knife in a brush block or knife holder where the blade does not touch metal items, use a honing rod between sharpenings and resharpen on a whetstone at the original factory bevel angle of 15–17°.
