Description
The Samura Bamboo cleaver is a meat cleaver with a massive, very wide 180 mm blade. It is designed for processing beef, pork and poultry, including the bones, tendons and other tough tissue that an ordinary kitchen knife is not made for. It handles fish too, from removing the head of a large fish to chopping it into steaks.
Blade and steel
The blade is made from a single layer of AUS-8 stainless steel, hardened to 58–59 HRC. This hardness gives you a practical balance: the edge holds up to regular chopping, and when it needs attention, it is straightforward to restore on a whetstone. As a stainless steel, AUS-8 is corrosion-resistant, but you should still wash and dry the cleaver soon after use.
The double-bevel edge has a factory sharpening angle of 40°. Thanks to this wide angle, the cleaver copes with fairly large bones, tendons and other hard tissue.
Handle and balance
The silver handle is made of stainless steel and shaped like a bamboo stem, the signature of the series. Together with the steel blade, it gives the cleaver a completely metal design. The cleaver weighs 347 g and measures 311 mm overall.
Best uses
- Chopping beef, pork and poultry
- Cutting through bones, tendons and other tough tissue
- Preparing a chicken for stuffing
- Removing the head of a large fish
- Chopping fish into steaks
Care and sharpening
Rinse the cleaver with hot water and wipe it dry before first use. Wash it by hand with non-abrasive materials and wipe it dry; a dishwasher is not recommended, and do not leave it in the sink for long. Cut on wooden or plastic boards, never on glass, and leave frozen food to a double-sided saw knife with a serrated blade. Store the cleaver in a brush block or knife holder where the blade does not touch metal items, use a honing rod between sharpenings and resharpen on a whetstone at the original factory sharpening angle of 40°.
About the Bamboo series
The Bamboo series is known for its full metal body: AUS-8 steel blades paired with stainless steel handles shaped like a bamboo stem. Ergonomic handles run through the range, which covers an array of knife types, and within it the cleaver is the knife for meat and bones. Like all SAMURA knives, it comes with a 2-year warranty.
