The details

A closer look

The Samura Harakiri gyuto knife is a Japanese-style chef's knife with a 182 mm blade and a black handle. It is a lightweight all-rounder for everyday prep, from boneless meat and fish to vegetables, fruit and bread. Like the rest of the Harakiri line, it combines quality and functionality with a budget-conscious approach.

Blade and steel

The blade is made from a single layer of AUS-8 stainless steel, hardened to 58–59 HRC. AUS-8 can hold its sharpness for a long time in regular use, and at this hardness you can still restore the edge on a whetstone without much effort. As a corrosion-resistant stainless steel, it stays in good condition when you wash and dry the knife soon after use.

The double-bevel edge is ground on both sides of the blade, which keeps resharpening straightforward. The blade is 47 mm high.

Handle and balance

The comfortable black handle is made of ABS plastic and secured with three classic rivets. The gyuto has a full-tang construction: the tang runs along the entire length of the handle between ABS plastic plates, which gives you a good grip. The knife measures 304 mm overall.

Best uses

  • Slicing, dicing and portioning boneless meat
  • Cutting and portioning fish
  • Chopping, slicing and dicing vegetables
  • Slicing fruit
  • Cutting bread

Care and sharpening

Rinse the knife with hot water and wipe it dry before first use. After that, wash it by hand with non-abrasive materials and wipe it dry; a dishwasher is not recommended, and the knife should not be left in the sink for long. Cut on wooden or plastic boards, never on glass, and leave bones to a SAMURA cleaver and frozen food to a double-sided serrated saw knife. Store the knife in a brush block or knife holder where the blade does not touch metal items, use a honing rod between sharpenings and resharpen on a whetstone at the original factory bevel angle of 15–17°.

Care & sharpening

Keep it sharp

  • Before first use, rinse with hot water and wipe dry.

  • Clean by hand with non-abrasive materials and wipe dry. A dishwasher is not recommended.
