Description
The Samura Reptile Chef Modern knife is an all-round kitchen knife with a 200 mm blade. It takes care of most everyday prep, from slicing meat and portioning fish to chopping vegetables, cutting fruit and slicing bread. The blade is AUS-10 stainless steel with a convex edge, and the ribbed handle is stainless steel as well.
Blade and steel
The blade is made from a single layer of AUS-10 stainless steel, hardened to 59–61 HRC. A hard blade keeps its edge for a long time, so you can cook for longer between sharpenings. In return, it needs a little care: keep it away from bones, frozen food and glass boards. AUS-10 is a corrosion-resistant stainless steel and stays in good condition when you wash and dry the knife soon after use.
The edge is convex-sharpened, as described for the Reptile series: the bevel is gently rounded rather than ground flat. The blade is sharpened to a precise angle for smooth, efficient cuts through different kinds of food, and it has a satin finish.
Handle and balance
The silver handle is made of stainless steel and has the ribbed design of the Reptile series. Stainless steel is durable and resistant to corrosion, and the sleek, modern handle gives you a secure grip and precise control as you guide the blade through food. SAMURA describes the series as ultra-light: this knife weighs 138 g net and measures 346 mm overall.
Best uses
- Slicing and dicing boneless meat
- Cutting and portioning fish
- Chopping, slicing and dicing vegetables
- Slicing fruit
- Cutting bread
Care and sharpening
Before first use, rinse the knife with hot water and wipe it dry. Wash it by hand with non-abrasive materials and dry it straight away; a dishwasher is not recommended, and the knife should not be left in the sink for long. Cut on wooden or plastic boards, never on glass, leave bones to a SAMURA cleaver and frozen food to a double-sided saw knife with a serrated blade, and store the knife in a brush block or knife holder where the blade does not touch metal items. Use a honing rod between sharpenings and resharpen on a whetstone at the original factory bevel angle of 15–17°.
About the Reptile series
The Reptile series looks back to the Mesozoic era, when giant reptiles roamed the Earth, and SAMURA presents it as a marriage between heritage and contemporary design. Like all SAMURA knives, this one comes with a 2-year warranty.
