Description
This is the engraved version of the Samura Reptile slicing knife, with a long, narrow 274 mm blade. It is made for work that needs precision and control, such as cutting thin slices of meat, poultry or fish, and it also works for vegetables, fruit, bread and sausage. The blade is AUS-10 stainless steel with a convex edge; the handle is ribbed stainless steel.
Blade and steel
A single layer of AUS-10 stainless steel forms the blade, hardened to 59–61 HRC. Steel at this hardness holds its edge well, so you return to the whetstone less often. AUS-10 is a corrosion-resistant stainless steel; washing and drying the knife soon after use helps keep it in good condition.
The edge is finished with the convex sharpening typical of the Reptile series, in which the bevel curves gently down to the cutting line rather than being ground flat. At 274 mm long and 41 mm high, this narrow blade helps you make clean, precise cuts. It has a satin finish.
Handle and balance
The silver handle is light, ribbed stainless steel in the style of the Reptile series. Because the series is designed around an ultra-light weight, the knife sits comfortably in your hand whatever you are slicing. It weighs 147 g net and measures 421 mm overall.
Best uses
- Slicing meat and poultry thinly
- Slicing fish into thin pieces
- Slicing vegetables and fruit
- Cutting bread
- Slicing sausage
Care and sharpening
Rinse the knife with hot water and dry it before you use it for the first time. Clean it by hand with non-abrasive materials, dry it at once and do not leave it in the sink for long; a dishwasher is not recommended. Slice on wooden or plastic boards, never on glass, leave bones to a SAMURA cleaver and frozen food to a double-sided saw knife with a serrated blade, and keep the knife in a brush block or knife holder where the blade does not touch metal items. Use a honing rod between sharpenings, and when it is time to sharpen, use a whetstone at the original factory bevel angle of 15–17°.
About the Reptile series
The Reptile series takes its cue from the Mesozoic era, when giant reptiles roamed the Earth, and brings heritage and contemporary design together. Its knives combine AUS-10 stainless steel blades with ribbed stainless steel handles, and like all SAMURA knives they come with a 2-year warranty.
