Description
The Samura Reptile Fillet Knife Swordfish has a long 252 mm blade for fish and meat. Its length suits filleting medium to large fish, and you can also use it to trim and portion meat. The AUS-10 stainless steel blade has a convex edge, and the ribbed handle is stainless steel.
Blade and steel
The blade is made from a single layer of AUS-10 stainless steel, hardened to 59–61 HRC. A hard blade holds its edge for a long time, so you spend more time cutting and less time sharpening. AUS-10 is a corrosion-resistant stainless steel, and it stays in good condition when you wash and dry the knife soon after use.
The edge has the convex sharpening of the Reptile series: the bevel is gently rounded rather than ground flat. The blade itself has a satin finish.
Handle and balance
The silver handle is made of stainless steel and has the ribbed shape typical of the Reptile series. With the ultra-light weight of the series, it is made to sit comfortably in your hand. The knife weighs just 92 g net and measures 402 mm overall.
Best uses
- Filleting medium to large fish
- Cutting and portioning fish
- Trimming meat
- Slicing boneless meat
Care and sharpening
Rinse the knife with hot water and wipe it dry before first use. After that, wash it by hand with non-abrasive materials and wipe it dry; a dishwasher is not recommended, and the knife should not be left in the sink for long. Cut on wooden or plastic boards, never on glass, leave cutting through bone to a SAMURA cleaver and frozen food to a double-sided saw knife with a serrated blade, and store the knife in a brush block or knife holder where the blade does not touch metal items. Use a honing rod between sharpenings and sharpen on a whetstone at the original factory bevel angle of 15–17°.
About the Reptile series
The Reptile series is inspired by the Mesozoic era, when giant reptiles roamed the Earth, and combines heritage with contemporary design. Its knives pair AUS-10 stainless steel blades with ribbed stainless steel handles, and like all SAMURA knives they come with a 2-year warranty.
