Description
The Samura Reptile santoku knife with engraving is a Japanese-style all-purpose knife with a 170 mm blade. It is made for slicing, dicing and chopping vegetables, fruit, meat and fish, and it cuts bread too. It is the engraved version of the standard model and shares its specifications.
Blade and steel
The blade is a single layer of AUS-10 stainless steel, hardened to 59–61 HRC. A blade this hard holds its edge for a long time, so you spend more time cutting and less time sharpening. In return, a hard edge asks for a little care: keep it away from bones, frozen food and glass boards. AUS-10 is a corrosion-resistant stainless steel, and washing and drying the knife soon after use helps keep it in good condition.
The edge is convex-sharpened, with a bevel that is gently rounded rather than ground flat, and it is sharpened to a precise angle so the blade moves smoothly through different kinds of food. The santoku blade is 49 mm high and has a satin finish.
Handle and balance
The silver handle is stainless steel, ribbed in the style of the Reptile series. It is durable and resistant to corrosion, and its ergonomic design gives you a secure grip and precise control while you cut. The series is designed to be ultra-light, and this santoku weighs 140 g net, with an overall length of 316 mm.
Best uses
- Slicing, dicing and chopping vegetables
- Slicing fruit
- Slicing and dicing boneless meat
- Slicing and portioning fish
- Cutting bread
Care and sharpening
Before first use, rinse the santoku with hot water and wipe it dry. Wash it by hand with non-abrasive materials and wipe it dry; a dishwasher is not recommended, and the knife should not be left in the sink for long. Cut on wooden or plastic boards, never on glass, use a SAMURA cleaver for bones and a double-sided saw knife with a serrated blade for frozen food, and store the knife in a brush block or knife holder where the blade does not touch metal items. Use a honing rod between sharpenings and sharpen on a whetstone at the original factory bevel angle of 15–17°.
