Description
The Samura Reptile paring knife with engraving is a compact knife with an 82 mm blade for fine work on fruit and vegetables, the engraved version of the standard model. Use it for peeling, trimming and scoring, and for cutting small fruit and vegetables, where a short blade gives you close control. The blade is AUS-10 stainless steel with a convex edge, and the ribbed handle is stainless steel.
Blade and steel
The blade is a single layer of AUS-10 stainless steel, hardened to 59–61 HRC. A blade this hard holds its edge for a long time, so you can peel and trim for longer between sharpenings. In return, keep it away from bones, frozen food and glass boards. AUS-10 is a corrosion-resistant stainless steel; wash and dry the knife soon after use and it stays in good condition.
The edge has convex sharpening, one of the features SAMURA names for the Reptile series, with a gently rounded bevel rather than a flat one. The blade has a satin finish.
Handle and balance
The silver stainless steel handle has the ribbed shape of the Reptile series. SAMURA describes the series as ultra-light, and this knife weighs 60 g net. Its compact size makes it easy to guide and control in small, precise cuts. It measures 193 mm overall.
Best uses
- Peeling fruit and vegetables
- Trimming and scoring fruit and vegetables
- Cutting small fruit and vegetables
- Fine cutting work where you need close control
Care and sharpening
Rinse the knife with hot water and wipe it dry before you use it for the first time. Clean it by hand with non-abrasive materials and wipe it dry; a dishwasher is not recommended, and do not leave the knife in the sink for long. Cut on wooden or plastic boards, never on glass, leave bones to a SAMURA cleaver and frozen food to a double-sided saw knife with a serrated blade, and keep the knife in a brush block or knife holder where the blade does not touch metal items. Hone it on a honing rod between sharpenings and sharpen it on a whetstone at the original factory bevel angle of 15–17°.
About the Reptile series
The Reptile series is inspired by the Mesozoic era, when giant reptiles roamed the Earth, and SAMURA presents it as a marriage between heritage and contemporary design. Its knives pair AUS-10 stainless steel blades with ribbed stainless steel handles, and like all SAMURA knives, they come with a 2-year warranty.
