Description
This is the engraved version of the Samura Reptile cleaver, with a 158 mm blade made for meat and fish. Reach for it when you want to chop and portion meat, break down larger cuts or divide fish into portions. It combines an AUS-10 stainless steel blade and a convex edge with a ribbed stainless steel handle.
Blade and steel
The blade is made from a single layer of AUS-10 stainless steel and hardened to 59–61 HRC. Steel at this hardness holds its edge well, so you need to sharpen less often. AUS-10 is a corrosion-resistant stainless steel; washing and drying the blade soon after use helps keep it in good condition.
The cleaver has the convex sharpening that is typical of the Reptile series: its bevel curves gently towards the cutting line instead of being ground flat. The blade is 158 mm long and 70 mm high, with a satin finish.
Handle and balance
The silver handle is made of stainless steel and has the ribbed shape of the Reptile series. SAMURA designed the series around an ultra-light weight, so the cleaver sits comfortably in your hand whatever you are preparing. It weighs 160 g net and is 301 mm long overall.
Best uses
- Chopping meat into portions
- Breaking down larger cuts of meat
- Chopping meat finely by hand
- Cutting and portioning fish
Care and sharpening
Before first use, rinse the cleaver with hot water and wipe it dry. Wash it by hand with non-abrasive materials and dry it straight away; a dishwasher is not recommended, and the cleaver should not sit in the sink for long. Work on wooden or plastic boards, never on glass, take care with food that contains bones, and keep frozen food for a double-sided saw knife with a serrated blade. Store the cleaver in a brush block or knife holder where the blade does not touch metal items, hone it on a rod between sharpenings and sharpen it on a whetstone at the original factory bevel angle of 15–17°.
About the Reptile series
The Reptile series draws on the Mesozoic era, when giant reptiles roamed the Earth, and combines heritage with contemporary design. Its knives pair AUS-10 stainless steel blades with ribbed stainless steel handles and, like all SAMURA knives, come with a 2-year warranty.
