Description
The Samura Reptile chef's knife with engraving is an all-round kitchen knife with a 200 mm blade. It covers everyday prep, from slicing meat and portioning fish to chopping vegetables, cutting fruit and slicing bread. It is the engraved version of the standard model and shares its specifications.
Blade and steel
The blade is a single layer of AUS-10 stainless steel, hardened to 59–61 HRC. At this hardness the edge stays sharp for a long time, so you reach for the whetstone less often. A hard edge also asks for some respect: keep it away from bones, frozen food and glass boards. AUS-10 is a corrosion-resistant stainless steel; washing and drying the knife soon after use helps keep the blade in good condition.
The edge is convex-sharpened, which means the bevel is gently rounded rather than ground flat. SAMURA sharpens the blade to a precise angle, so it moves smoothly through different kinds of food. The blade is 47 mm high and has a satin finish.
Handle and balance
The silver handle is made of stainless steel and carries the ribbed shape of the Reptile series. It is durable and resistant to corrosion, and its ergonomic design gives you a secure, comfortable grip and precise control as you cut. The series is designed to be ultra-light: this knife weighs 138 g net and measures 346 mm overall.
Best uses
- Slicing and portioning boneless meat
- Slicing and portioning fish
- Chopping and dicing vegetables and onions
- Slicing fruit
- Cutting bread
Care and sharpening
Before first use, rinse the knife with hot water and wipe it dry. Wash it by hand with non-abrasive materials and dry it straight away; a dishwasher is not recommended, and the knife should not sit in the sink for long. Cut on wooden or plastic boards, never on glass, use a SAMURA cleaver for bones and a double-sided saw knife with a serrated blade for frozen food, and store the knife in a brush block or knife holder where the blade does not touch metal items. Use a honing rod between sharpenings and sharpen on a whetstone at the original factory bevel angle of 15–17°.
About the Reptile series
The Reptile series takes its inspiration from the Mesozoic era, when giant reptiles roamed the Earth, and SAMURA describes it as a marriage between heritage and contemporary design. Like every SAMURA knife, this one comes with a 2-year warranty.
