Description
The Samura Reptile Chef Modern knife with engraving is a versatile kitchen knife with a 200 mm blade. You can use it for slicing, chopping and dicing across everyday cooking: meat, fish, vegetables, fruit and bread. It is the engraved version of the standard model and shares its specifications.
Blade and steel
The blade is made from a single layer of AUS-10 stainless steel with a hardness of 59–61 HRC. Hard steel keeps a keen edge for a long time, which means fewer sharpening sessions. The flip side is that the edge should be kept away from bones, frozen food and glass boards. AUS-10 is a corrosion-resistant stainless steel, and washing and drying the knife promptly helps keep it in good condition.
The edge is convex-sharpened: rather than being ground flat, the bevel is gently rounded. The blade is sharpened to a precise angle for smooth, efficient cuts through different kinds of food, and it has a satin finish. It is 46 mm high.
Handle and balance
The ribbed handle is stainless steel in silver, in the style of the Reptile series. The material is durable and resistant to corrosion, and the sleek, modern handle design gives you a secure grip and precise control as you work. Reptile knives are designed to be ultra-light, and this one weighs 138 g net, with an overall length of 346 mm.
Best uses
- Slicing and dicing boneless meat
- Cutting and portioning fish
- Chopping and slicing vegetables
- Cutting fruit
- Slicing bread
Care and sharpening
Rinse the knife with hot water and wipe it dry before you use it for the first time. Clean it by hand with non-abrasive materials and dry it at once; a dishwasher is not recommended, and do not leave the knife in the sink for a long time. Work on wooden or plastic boards rather than glass, leave bones to a SAMURA cleaver and frozen food to a double-sided saw knife with a serrated blade, and keep the knife in a brush block or knife holder where the blade does not touch metal items. Between sharpenings, draw the edge along a honing rod from the handle to the point, and resharpen on a whetstone at the original factory bevel angle of 15–17°.
About the Reptile series
The Reptile series looks back to the Mesozoic era, when giant reptiles roamed the Earth. SAMURA presents it as a marriage between heritage and contemporary design, with ribbed stainless steel handles. This knife, like all SAMURA knives, comes with a 2-year warranty.
