Description
The Samura Harakiri serrated utility knife pairs a 150 mm blade with a serrated edge and a white acrylic handle. It is made for everyday jobs: slicing fruit and vegetables, cutting bread, and portioning cheese and sausage. If you want one handy knife for quick prep at the counter, it is a practical choice.
Blade and steel
The blade is made from a single layer of AUS-8 stainless steel, hardened to 58–59 HRC. For everyday home cooking this is a practical level of hardness. AUS-8 is a corrosion-resistant stainless steel, and it stays in good condition when you wash and dry the knife soon after use.
The serrated edge is what sets this knife apart from a plain-edged utility knife. Used with a gentle sawing motion, the serrations bite into crusts and firm skins instead of sliding over them. The blade is 31 mm high.
Handle and balance
The handle is made of white acrylic. The knife weighs 61 g net and measures 260 mm overall, in keeping with the lightweight build of the Harakiri series.
Best uses
- Slicing fruit and vegetables, including those with firm skins
- Cutting bread
- Slicing and portioning cheese
- Slicing sausage
Care and sharpening
Rinse the knife with hot water and wipe it dry before first use. After that, wash it by hand with non-abrasive materials and wipe it dry; a dishwasher is not recommended, and the knife should not be left in the sink for long. Cut on wooden or plastic boards, never on glass, leave bones to a SAMURA cleaver and frozen food to a double-sided saw knife with a serrated blade, and store the knife in a brush block or knife holder where the blade does not touch metal items. Use a honing rod between sharpenings and sharpen on a whetstone at the original factory bevel angle of 15–17°.
