The details
A closer look
The Samura Damascus utility knife with a 150 mm blade is a versatile kitchen knife for cutting and peeling a wide variety of foods. Its thin blade is suited to fruit, vegetables, cheese, sausage and bread. The blade is made from 67 layers of Damascus steel and paired with a black G-10 handle.
Blade and steel
The thin blade is made from 67 layers of Damascus steel and hardened to 60–61 HRC. Hard steel keeps its edge for a long time, so you can work through a lot of cutting before the knife needs sharpening. A hard edge does ask for some care: keep it away from bones, frozen food and glass surfaces.
The convex edge is sharpened on both sides, with an original factory sharpening angle of 16–18°. Because the edge is ground on both sides, it is easy to keep in shape with a honing rod and a whetstone.
Handle and balance
The ergonomic black G-10 handle is durable and resistant to moisture. A stainless steel bolster sits between blade and handle, adding durability and giving you full control as you cut. With a net weight of 112 g and an overall length of 270 mm, the knife is light, yet hard-wearing.
Best uses
- Peeling and cutting fruit
- Peeling, slicing and dicing vegetables
- Cutting cheese
- Slicing sausage
- Cutting bread
Care and sharpening
Rinse the knife with hot water and wipe it dry before first use, then wash it by hand with non-abrasive materials and wipe it dry; a dishwasher is not recommended, and the knife should not be left in the sink for long. Cut on wooden or plastic boards, never on glass, and leave bones to a SAMURA cleaver and frozen food to a double-sided saw knife with a serrated blade. Store the knife in a brush block or knife holder where the blade does not touch metal items. Use a honing rod between sharpenings and sharpen on a whetstone at the original factory angle of 16–18°.

Care & sharpening
Keep it sharp
- Before first use, rinse with hot water and wipe dry.
- Use only on wooden or plastic cutting boards, never on glass.
- Take care with food that contains bones: use a SAMURA cleaver for meat and bones and a double-sided saw knife with a serrated blade for frozen food.
- Clean by hand with non-abrasive materials and wipe dry. A dishwasher is not recommended.
- Do not leave knives in the sink for a long time.
- Store in a brush block or knife holder so that the blade does not touch metal items.
- Sharpen on a whetstone and keep the original factory sharpening angle of this blade (16–18°). Use a honing rod between sharpenings, moving the edge along the rod from the handle to the point.
- Never test sharpness with bare hands; use a piece of paper.
