The details
A closer look
The Samura Shadow santoku knife is a Japanese-style all-purpose knife with a 175 mm blade. The santoku is the Japanese counterpart of the chef's knife, with a traditionally wide blade, a long cutting edge and a spine that slopes down to the point. It is made for everyday prep, such as chopping vegetables for a salad or greens for a soup, shredding cabbage and cutting meat.
Blade and steel
The blade is made from a single layer of AUS-8 stainless steel, hardened to 58–59 HRC. This hardness gives you a practical balance: the edge holds up well to daily chopping, and when it needs attention, it is straightforward to restore on a whetstone. As a stainless steel, AUS-8 is corrosion-resistant, but you should still wash and dry the knife soon after use.
A black non-stick coating covers the blade and helps keep food from sticking as you slice, which is useful on a wide santoku blade working through vegetables. The double-bevel edge is ground on both sides, so resharpening stays simple. The blade is 175 mm long and 49 mm high.
Handle and balance
The handle is made of black ABS plastic, a durable material that is comfortable to hold. SAMURA gives this santoku a shifted centre of gravity, so it takes little effort to guide the blade. The knife weighs 113 g and measures 296 mm overall.
Best uses
- Chopping, slicing and dicing vegetables
- Shredding cabbage and chopping greens
- Cutting boneless meat into slices, strips or cubes
- Slicing and portioning fish
- Slicing fruit and cutting bread
Care and sharpening
Rinse the knife with hot water and wipe it dry before first use. After that, wash it by hand with non-abrasive materials and wipe it dry; a dishwasher is not recommended, and the knife should not be left in the sink for long. Cut on wooden or plastic boards, never on glass, and leave bones to a SAMURA cleaver and frozen food to a double-sided saw knife with a serrated blade. Store the knife in a brush block or knife holder where the blade does not touch metal items, use a honing rod between sharpenings and resharpen on a whetstone at the original factory bevel angle of 15–17°.
