Description
The Samura Mo-V Fillet Knife Fisherman is a fillet knife with a 218 mm blade for preparing fish and meat. Use it to fillet and skin fish, portion fillets and trim boneless cuts. Its single-layer AUS-8 stainless steel blade is paired with a black G-10 handle and a stainless steel bolster.
Blade and steel
The blade is made from a single layer of AUS-8 stainless steel, hardened to 58–59 HRC. This hardness gives you a practical balance: the edge holds up well through regular filleting and trimming, and when it needs attention, it is straightforward to restore on a whetstone. As a stainless steel, AUS-8 is corrosion-resistant, which matters when you work with wet fish, but you should still wash and dry the knife soon after use.
The double-bevel edge is ground on both sides, with an original factory bevel angle of 15–17°. The blade is 218 mm long with a blade height of 41 mm.
Handle and balance
The black G-10 handle is ergonomic and moisture-resistant, and it meets the blade at a stainless steel bolster. The knife weighs 203 g and measures 370 mm overall.
Best uses
- Filleting fish
- Removing the skin from fish fillets
- Portioning fish fillets
- Trimming fat and sinew from meat
- Slicing boneless cuts of meat
Care and sharpening
Rinse the knife with hot water and wipe it dry before first use, then wash it by hand with non-abrasive materials and dry it after each use; a dishwasher is not recommended, and the knife should not be left in the sink for long. Cut on wooden or plastic boards, never on glass, and take care with food that contains bones: use a SAMURA cleaver for chopping meat and bones and a double-sided serrated saw knife for frozen food. Store the knife in a brush block or knife holder where the blade does not touch metal items. Use a honing rod between sharpenings and resharpen on a whetstone at the original factory bevel angle of 15–17°.
