Description
The Samura Harakiri slicing knife has a 196 mm blade and a black handle, and it is built for controlled, even slices. Use it to carve boneless meat and poultry, portion fish and slice bread, vegetables, fruit and sausage. It suits Western and European dishes just as well as traditional Japanese food, whether you are a beginner or an experienced cook.
Blade and steel
The blade is a single layer of AUS-8 stainless steel with a hardness of 58–59 HRC. That is a practical level for a home kitchen: the edge holds up to regular use, and a whetstone brings it back when it starts to dull. As a corrosion-resistant stainless steel, AUS-8 stays in good condition if you wash and dry the knife promptly.
With a double-bevel edge, ground on both sides, the knife is straightforward to resharpen. The blade is 30 mm high, and its length lets you slice carefully and keep control of the cut, leaving neat, straight edges.
Handle and balance
The black handle is made of durable ABS plastic, with an ergonomic shape in a classic design that gives you a comfortable, secure grip. As across the Harakiri series, the knife is built with a full tang, and three classic rivets hold the handle in place. The knife weighs 90 g net and measures 317 mm overall.
Best uses
- Carving boneless meat and poultry
- Slicing fish into even portions
- Slicing bread
- Slicing vegetables and fruit
- Slicing sausage and meat for sharing platters
Care and sharpening
Before first use, rinse the knife with hot water and wipe it dry. Always wash it by hand with non-abrasive materials and dry it straight away; a dishwasher is not recommended, and the knife should not be left in the sink for long. Slice on wooden or plastic boards, never on glass, leave bones to a SAMURA cleaver and frozen food to a double-sided serrated saw knife, and keep the knife in a brush block or knife holder where the blade does not touch metal items. Between sharpenings, use a honing rod; when the edge needs more, sharpen on a whetstone at the original factory bevel angle of 15–17°.
