The details
A closer look
The Samura Harakiri long slicer knife has a 290 mm blade and a black handle. It is made for long, even slices: carving boneless roasts, slicing fish and cutting bread, vegetables, fruit and sausage. It is a practical choice if you often cook larger cuts of meat or whole fish fillets.
Blade and steel
The blade is a single layer of AUS-8 stainless steel, hardened to 58–59 HRC. That is a practical level for a home kitchen: the edge holds up to regular slicing, and a whetstone restores it without much effort when it starts to dull. As a corrosion-resistant stainless steel, AUS-8 stays in good condition if you wash and dry the knife promptly.
The double-bevel edge is ground on both sides, which keeps resharpening straightforward. With 290 mm of blade, you can draw the knife through a roast or a fillet in one long stroke instead of sawing back and forth, and that helps keep the slices even.
Handle and balance
The handle is made of durable black ABS plastic and fixed with classic rivets on a full-tang construction, as across the Harakiri series. The knife measures 413 mm overall and weighs 123 g net, so it stays light in the hand despite the long blade.
Best uses
- Carving boneless roasts and cooked meat into thin slices
- Slicing fish fillets and portioning fish
- Slicing bread
- Slicing large vegetables and fruit
- Slicing sausage and cured meat
Care and sharpening
Rinse the knife with hot water before first use and wipe it dry. Always wash it by hand with non-abrasive materials and dry it straight away; a dishwasher is not recommended, and do not leave the knife in the sink for long. Slice on wooden or plastic boards, never on glass, leave bones to a SAMURA cleaver and frozen food to a double-sided saw knife with a serrated blade, and store the knife in a brush block or knife holder where the blade does not touch metal items. Use a honing rod between sharpenings, drawing the edge from the handle to the point, and sharpen on a whetstone at the original factory bevel angle of 15–17°.

Care & sharpening
Keep it sharp
- Before first use, rinse with hot water and wipe dry.
- Use only on wooden or plastic cutting boards, never on glass.
- Take care with food that contains bones: use a SAMURA cleaver for meat and bones and a double-sided saw knife with a serrated blade for frozen food.
- Clean by hand with non-abrasive materials and wipe dry. A dishwasher is not recommended.
- Do not leave knives in the sink for a long time.
- Store in a brush block or knife holder so that the blade does not touch metal items.
- Sharpen on a whetstone and keep the original factory bevel angle of 15–17°. Use a honing rod between sharpenings, moving the edge along the rod from the handle to the point.
- Never test sharpness with bare hands; use a piece of paper.
