Description
The Samura Harakiri utility knife is a light, multi-purpose knife with a 150 mm blade and a black handle. It is made for everyday cutting of fruit and vegetables, sausage and cheese, and for slicing bread.
Blade and steel
The blade is a single layer of AUS-8 stainless steel, hardened to 58–59 HRC. That hardness suits home cooking: the edge copes well with daily use, and you can restore it on a whetstone without much effort. As a corrosion-resistant stainless steel, AUS-8 keeps everyday care simple, provided you wash and dry the knife soon after use.
The double-bevel edge is ground on both sides, so it is easy to keep sharp with a honing rod and a whetstone. The blade is 30 mm high.
Handle and balance
The black handle is made of durable ABS plastic and secured with classic rivets, and the knife has the full-tang construction of the Harakiri series. At 51 g net and 260 mm overall, it is light, easy and pleasant to handle.

Care and sharpening
Before first use, rinse the knife with hot water and wipe it dry. Wash it by hand with non-abrasive materials and wipe it dry; a dishwasher is not recommended, and the knife should not be left in the sink for long. Cut on wooden or plastic boards, never on glass, leave bones to a SAMURA cleaver and frozen food to a double-sided serrated saw knife, and keep the knife in a brush block or knife holder where the blade does not touch metal items. Use a honing rod between sharpenings and resharpen on a whetstone at the original factory bevel angle of 15–17°.
